Easter truffels
No eggs this Easter, but truffels!
With a skin of 85% cocoa Valhrona Le Noir chocolate, Extra Amer, and Valhrona cocoa powder, to balance the sweetness of the filling consisting of light cream and 72% cocoa Trader Joe’s dark chocolate; the latter received a nip of French absinthe as well to give it a slight touch of that lovely anise flavor.
All handmade while a cello suite of Bach was playing, followed by an aria out of the Barber of Seville sung by Pavarotti…
